Strawberry Pie

The other day I posted about how much I love to bake and eat pies.  Here is another installment in my tribute to pies.  In case you are looking for a recipe to bring to a get-together, this one is a keeper.  It is a cross between pie, cobbler and crisp, and it is spectacular with vanilla ice cream (we just got an ice cream maker, so I plan to post about it soon!). 

Strawberry Pie

Pie Filling
1 quart fresh strawberries, hulled and quartered
¼ cup brown sugar
¼ cup white sugar
5 tablespoons cornstarch
1 tablespoon melted butter
¼ teaspoon salt
¼ teaspoon cinnamon

Topping
¼ cup flour
¼ cup rolled oats
¼ cup brown sugar
Mix flour, oats and brown sugar.
4 tablespoons butter (I like to put it in the freezer and use a microplane to grate it onto pie)

Directions:
Combine the fillings toppings gently in a bowl and place into a prepared pie crust.  Cover the filling with the topping mixture, then put dabs of butter on top.

Bake at 375 degrees for 50-60 minutes. 

The finished product!
