I hate throwing away food. I like to try to use up what I’ve got and view it as a challenge. I had a couple large tomatoes that were a bit beyond ripe. I decided to make a simple sauce with them. It literally took less than five minutes.

First I cut the tomatoes in half and squeezed out the seeds. I roughly chopped the tomatoes and added them to a minced clove of garlic and a half teaspoon of olive oil that I already had working in a pan over medium heat. I let the tomatoes brown a bit and tossed in a bit of dried basil, red pepper flakes and pepper.
I had the pasta over some homemade gnocchi, and I was glad to put my tomatoes to use and avoid wasting them.
