Granola and Yogurt

I have been on a yogurt kick lately.  Have you tried Greek yogurt?  A friend who is a dietician recommended it to me as a way to get more dairy and protein in my diet.  I decided that I wanted to add some texture to the yogurt so I made granola this week.  I like to make granola every now and again, but I am lazy, so I make it on the stovetop.  I start with oats in a non-stick skillet over medium heat.  I let the oats toast a bit, then I poured them out onto a plate.  I toasted some almonds, too—just put them in the pan and let them hang out for about seven minutes.  I removed the almonds from the pan and put the skillet back over a medium heat.  I melted a tablespoon of butter and added four tablespoons of brown sugar and a tablespoon of real maple syrup.  Once this mixture was combined and heated to just below a boil, I removed it from the heat and added the oats, almonds and some coconut.  Once combined, I cooked it over low for about ten minutes to dry it out and give it a clumpy, granola texture.  You can also spread the granola on a baking sheet and put it in the oven at 350 degrees for about twenty minutes. 

Here’s the result:

 I’ve been eating mine all week stirred into plain yogurt with frozen blueberries and blackberries.
