Impromptu Potato Salad and Brats

My husband has a group of friends and colleagues who get together at our house every month to discuss politics, philosophy and other lofty subjects.  Since it is his gathering, he has been clear that he likes to take care of the arrangements—making food to serve and clutter-busting to make sure our house looks presentable—rather than task me with more chores. 

Except this week…I bailed him out.  He texted me that he would be stuck at work indefinitely, but guests would arrive in an hour.  On my way home from work, I stopped at the butcher for brats and charcoal and then at the bakery for rolls.  Easy.

If you read my blog regularly, you know that I can’t just serve brats.  I quickly whipped up my favorite coleslaw (I had a bag of coleslaw mix in the fridge).    I wanted something else, and put together a potato salad.  I happen to prefer mine without egg, so I scrubbed and cut up potatoes that needed to be used up and cooked them in the microwave.  I used a white ceramic microwave-safe bowl, added a bit of water and put on a glass lid.  I microwaved them for 11 minutes, stirring them mid-way through.  I drained them in a colander and rinsed with cold water to cool the potatoes.  In a mixing bowl, I put about a quarter cup each of fat-free mayo and fat-free sour cream.  I then added a bit of garlic powder, Bac-Os and a few shakes of dried parsley.    It was delicious and good-looking, and was ready to roll in less then 15 minutes. 

I think this one is a keeper.  And, my husband says he’ll pay back the favor with hugs.  It’s a lovely thought, but I wonder if I can exchange them for him making dinner for me tomorrow.
