Ice Cream Pie is a Piece of Cake

I do love dessert with wow factor.  I don’t love a fussy dessert that leaves me with a boatload of dishes to clean up.

And I do love ice cream.

We had guests over for dinner on Sunday night, and I concentrated on making lots of sides for our barbecue since I really, really love sides.  I made everything from scratch: cornbread muffins, baked beans, coleslaw, roasted potatoes, garlic butter corn on the cob, and grilled cheese-stuffed jalapenos wrapped in bacon.

That did not leave a lot of time for making dessert.

I bought a pre-made chocolate pie shell, hot fudge sauce, strawberry ice cream, chocolate chip ice cream, vanilla ice cream and whipped cream.  I let the chocolate chip ice cream soften and filled the shell with it.  I swirled on fudge and let it set in the freezer for a little while.  Then, I added some strawberry ice cream and put the concoction back in the freezer.  Once it was frozen, I added nice rounded scoops of vanilla ice cream, mounds of whipped cream and more hot fudge.  After about an hour, I added grated chocolate and sprinkles (since I thought my young guests would find sprinkles more festive).

Don't the looks on my young guests' faces just say it all?

Do you make frozen desserts?   I’m already thinking about the holidays and how peppermint ice cream would be great in the dark chocolate pie shell.  Got ideas?  Share ‘em here.

Great idea! I make an orange dreamsicle pie. Just use a pre-made graham cracker crust, one layer of vanilla bean ice cream and top it with a layer of orange sherbet. You can also grate some orange zest on the vanilla ice cream. It looks so pretty when you slice it! It's great for summer, too.
