Today is the day: OAMC day. That stands for Once-A-Month-Cooking. It is a method for cooking a large quantity of food at one time and freezing it to use all month. My goal is to fill the freezer to make the transition back to the fall routine easier. We are watching what we eat more and want to avoid dining out. OAMC also helps with portion control, since I plan to package meals in thoughtfully sized portions. OAMC is a great solution for families, but can also be done for singles and couples, who may not feel like cooking every day from scratch.
When it comes to OAMC, it pays to be organized. I have a bumper crop of herbs and vegetables right now, so I want to use them up. I have them cleaned, chopped and waiting for me in the refrigerator. Breaking up prep work over a couple days can help ease the magnitude of cooking a month’s work of meals in a day.
Today I am making:
Pesto Sauce
Vegetarian Chili and Sweet Country Cornbread
Lime Chicken
Plain Rice
Shredded Plain Chicken - which I plan to turn into Chicken Pot Pie and Chicken Enchiladas
Roasted Red Pepper Stuffed Chicken
Plain Biscotti - I made too many last winter and stashed some in the freezer, which worked very well!
Maybe a few batches of Banana Nut Waffles if I feel motivated!
