In an effort to lighten up for summer, I have been looking through my collections of cookbooks and recipes clipped from magazines and scrawled on scrap paper. I came across a Classic Pillsbury recipe magazine which must have belong to my mom…since it is twenty years old.
When it comes to eating more wisely, I fail miserably if I try to go to extremes and exclude all treats. I do have a sweet tooth, so any feeling of deprivation when it comes to treats, and I will abandon my whole eating plan.
Here are some of the great recipes I have been trying out. Like most anything, these, too, are best in moderation.
Melon Wedges
8 oz. carton vanilla yogurt
1 to 2 tablespoons frozen orange juice concentrate, thawed
1 cantaloupe, seeded, sliced
1 kiwifruit, peeled, sliced
Nutmeg
In small bowl, combine dressing ingredients; blend well. Place cantaloupe wedges on individual serving plates. Spoon 2 tablespoons dressing over each wedge. Top with kiwifruit slices. Sprinkle with nutmeg. Serve immediately. 4 servings.
I like to cut the cantaloupe and kiwi into chunks and add them to the bowl with the dressing and lightly toss them. The sweetness of the fruit and the creaminess of the yogurt (Greek yogurt is great in this) are really satisfying.
Sherbet `N Angelcake
1 loaf angel food or sponge cake (approximately 12x5 inches)
1 quart (4 cups) any flavor sherbet
Slice cake in half horizontally to form 2 layers. Place 1 layer on serving tray; spread evenly with about 2 cups of the sherbet. Top with remaining layer. Quickly spoon remaining sherbet over top of cake. Cover; freeze 2 to 3 hours or overnight. To serve, let stand at room temperature for about 10 minutes; cut cake into 1.5 inch slices. 6 servings.
This cake is very pretty when sliced, since it has alternating stripes of cake and sherbet. So far, I have made this using raspberry sherbet and orange. I liked raspberry best, and served it with fresh berries.
