Corn Dogs Are a Taste of Summer

A poll on the Betty Crocker website recently asked what your favorite summer fair foods. Lemonade, sno-cones and funnel cakes were mentioned, but the most popular choice—by far—was corn dogs.

Once, in the dead of winter, my husband and I hosted a summer themed dinner party. We wanted it to be whimsical, so we wore Hawaiian shirts, served all kinds of fair foods like lemonade, corn on the cob, and corn dogs. Making the corn dogs from scratch was a bit of an ordeal—especially since we used a deep fryer. They were delicious, but not so good for you, and also quite a mess to clean up. But, sometimes, you just have to have that taste of summer. There is an easier way to get that taste anytime, with Corn Dog Muffins baked in mini-muffin pans. These muffins are made using cornbread mix, with bits of hot dog baked in. With ketchup and yellow mustard, they are very satisfying, with way less fat and fuss.
