Pancakes and Quality Time

Have you recovered from losing an hour last week as our clocks “sprang forward?”  The time shift is a harbinger of spring, and even here in chilly Minne-snow-ta (as my out of state friends call it), daylight has lingered for much longer this week than it has in a very, very long time.

Before life gets busy with all the obligations of spring, like Saturday morning soccer practice, take time to enjoy one or two more lazy weekend days.  In our family, we love to make breakfast and talk about the week that has passed and the week coming up.  I like to plan breakfast in advance and to make sure I have everything I need ready to go, especially if friends or relatives are coming by.  Pancakes are a favorite, and keeping Bisquick on hand makes cooking easy.  Sometimes I even mix the batter the night before and leave it in the batter bowl in the refrigerator.

Get your family excited about Saturday or Sunday morning pancakes by whetting the appetite the night before.  Reading a story about pancakes gets little minds hungry for family time in the kitchen.  My favorite is Eric Carle’s picture book called Pancakes, Pancakes!.  It tells the story of a young boy who gathers all the ingredients needed for making a big batch of pancakes.  He, of course, meets many interesting people along the way.  Another great book is the classic Pancakes for Breakfast by Tomie de Paola.  Another favorite of mine is Blueberries for Sal by Robert McCloskey, about a young gal who picks blueberries with her mother.  Great inspiration for a batch of blueberry pancakes!

Don’t have time to make breakfast?  Pancakes can make a great dinner, too.
