Quick Fix, Healthy Meals

Consumers have a hard time getting Quick & Easy, (let alone Healthy) dinners on the table that their kids will eat these days.  (Heck, it's hard for me to do and I know about food and where to find the recipes.) Healthy Cooking from your Pantry

I recently taught a series of healthy cooking classes to employees.  A favorite topic was "Cooking from Your Pantry".  The idea is that if you keep your pantry well-stocked, including refrigerator and freezer, you'll be able to whip up recipes in minutes, plus these pantry recipes can be served in a variety of ways.  This in itself can be a real time-saver, can possibly be part of a dinner for another night.  I'm always looking for those short-cuts. Teen Cooking Class: Frozen Lattes and Crazy Fast Simple Scones

I am developing a series of cooking classes for teenagers.  The classes are at a local high school and are only an hour long.  This means that I need to develop quick recipes that will keep teens’ attention and that strike a balance between healthy (or “healthier”) recipes and treats.  I also like to develop recipes that are familiar to kids—one way to do that is to replicate restaurant recipes.  Our first class will teach teens how to make a frozen coffee drink and whipped cream from scratch.  The drink is easy to make.  We begin by adding about 3 ounces of cooled, strong coffee to a blender.  Add a tablespoon of brown sugar and ...

Simple is Better

Cooking, baking and entertaining is a treat to me and I treated myself to a lot of it over the holidays.  For one meal I baked Herb Roast Chicken and Vegetables, homemade dinner rolls, a tossed salad and Apple Crostata for dessert.  For another meal I made Herb-Crusted Pork Tenderloin, baked potatoes, Cascadian Farms edemame (green soybeans) and Cranberry Sauce.  (I'm always trying to add fruits or vegetables to dishes and get my kids and guests to eat more fruits and vegetables.)  I baked Oatmeal Cookies, made peanut brittle and homemade lefse.  Though my kids are now teens, they still prefer simple foods; pancakes, scrambled...
