Double-Chocolate Strawberry Pancakes
by AndiatBettyCrocker 2/9/2011 9:48:00 AM

This is a winning recipe. In fact, it was the Grand Prize Winner, last year, in a Better with Bisquick Recipe Contest. Ever since I first tasted it, I’ve been planning to make it for breakfast at our cabin. So close to Valentine’s Day, it was the perfect breakfast for Blake and me to make together. I’ve occasionally written posts about cooking with our grandson, Blake, since he was about 1 ½ years old. Now he is 3 ½ years old, and&nbs...

Pancake Fun
by AndiatBettyCrocker 7/8/2010 2:10:00 PM

Grandson Blake stayed with us for a couple of nights last week while his parents went to the hospital to bring home his new baby brother, Finn. As always when we get a chance to spend time with Blake, we find some time to cook. One morning we used a Tovolo Pancake Pen to make some fun pancakes. I whipped up a batch of Bisquick pancakes (see recipe below) in the bottle of the "pancake pen" and gave it a shake. Blake (with a little help from Jack) made pancakes in the shape of the letter B–the first ...

Breakfast on the Hill: Wild Rice Porridge
by jillbcooks 5/7/2010 3:38:00 PM

Wild Rice Porridge Sorry about the delay in posting this week!  I’ve been traveling this week.  I was in Washington, DC for an education event.  While there, I attended a breakfast hosted by Senator Al Franken, who represents the state where I live, which is Minnesota. Among the coffee, juices and pastries was a wonderful delight that perfectly represented the food traditions of Minnesota: Wild Rice Porridge.  Wild rice is actually not rice, but a grass with grain heads that are threshed.  The porridge was really delicious, creamy, but with a sort of chew...

Baked Egg Soufflés—A Tasty Breakfast for Mom on Mother’s Day
by AndiatBettyCrocker 5/7/2010 9:41:00 AM

Sometimes when Jack and I stay in town on a weekend, we head over to the Panera Bread Bakery-Café, near our home, for breakfast. Their Baked Egg Soufflés are my favorite breakfast to order, and it's hard to choose between the Four Cheese, Spinach & Bacon, Spinach & Artichoke and Turkey Sausage & Potatoes flavors. My favorite is Turkey Sausage & Potatoes. Here is one cut open. Because I lik...

Eggs—Fresh From the Backyard for Breakfast
by AndiatBettyCrocker 3/19/2010 9:00:00 AM

Karen sometimes works for us in the Betty Crocker Kitchens and last week, when she came in, brought me a dozen eggs her chickens had laid. Aren’t the eggs pretty in so many different shades of brown?Yes, even in a large metropolitan area, folks are raising chickens in their back yards. My friend, Janice, writes a blog called Three Swingin' Chicks, about raising three chickens in her backyard, in St. Paul, Minnesota. Do you know anyone who raises chickens? ...

Silicone Bakeware for a Little Cook
by AndiatBettyCrocker 9/30/2009 4:17:00 PM

It’s my birthday today and that reminds me of the birthday gift I got last year from Jason, Katie and Blake. It was a chef’s hat, apron and a silicone bakeware set —all for Blake. This was the perfect gift for me because it gave me another reason to cook with Blake. I s...

Pancakes and Quality Time
by jillbcooks 3/12/2009 10:05:00 AM

Have you recovered from losing an hour last week as our clocks “sprang forward?”  The time shift is a harbinger of spring, and even here in chilly Minne-snow-ta (as my out of state friends call it), daylight has lingered for much longer this week than it has in a very, very long time. Before life gets busy with all the obligations of spring, like Saturday m...

Simple is Better
by CheriAtBettyCrocker 1/8/2009 2:14:00 PM

Cooking, baking and entertaining is a treat to me and I treated myself to a lot of it over the holidays.  For one meal I baked Herb Roast Chicken and Vegetables, homemade dinner rolls, a tossed salad and Apple Crostata for dessert.  For another meal I made Herb-Crusted Pork Tenderloin, baked potatoes, Cascadian Farms edemame (green soybeans) and Cranberry Sauce.  (I'm always trying to add fruits or vegetables to dishes and get my kids and guests to eat more fruits and vegetables.)  I baked Oatmeal Cookies, made peanut brittle and homemade lefse.  Though my kids are now teens, they still prefer simple foods; pancakes, scrambled...

It's Worth a Drive to The Delta Diner
by AndiatBettyCrocker 7/8/2008 5:07:00 PM

If you are taking a road trip this summer and find yourself in northwestern Wisconsin, plan to stop at the Delta Diner for breakfast or lunch. We drove 23 miles from our cabin, through the beautiful North Woods of Wisconsin to arrive at this 1940's era diner—and it was worth the drive. ...

Breakfast at the Cabin
by AndiatBettyCrocker 5/29/2008 12:59:00 PM

In the summer, I need lots of great breakfast recipes since we often entertain guests during the weekends at our cabin. When I tire of making pancakes, waffles and egg casseroles, I look for something new. Here is one of my favorite new recipes: Ham and Egg Breakfast Tarts. ...
