This morning, I had the pleasure of giving Jillian Michaels (personal trainer for the popular TV show, The Biggest Loser) a tour of the Betty Crocker Kitchens. We have more than 7,000 square feet of kitchen space with 19 fully equipped individual kitchens designed for over 50,000 recipes tests each year. Adjacent to the kitchens is America’s “biggest” corporate cookbook library, complete with 1,260 feet of high-density rolling book shelves for easy access.

Fiber has a very important role in a healthy diet and in helping manage diabetes. Fiber provides a sense of fullness without the calories and satisfies your appetite without affecting blood glucose levels. And yet, many people do not get enough fiber. Experts recommend at least 25 grams of fiber per day. What's more, if you eat a food with 5 or more grams of fiber, you can subtract the fiber grams from the total grams of carbohydrate in the food. Calling all cinnamon-lovers....there is a new cinnamon cereal you'll want to know about. It's Cinnamon Chex® and has a terrific cinnamon taste, the best of any product I've tasted. (I'm very picky when it comes to my favorite flavor, cinnamon) And, the crunch that only Chex can provide is perfect with the cinnamon. The cereal is great with skim milk for breakfast first thing in the morning or anytime of day. (eating it straight from the box as a snack is my son Christian's favorite way to consume it).

Consumers have a hard time getting Quick & Easy, (let alone Healthy) dinners on the table that their kids will eat these days. (Heck, it's hard for me to do and I know about food and where to find the recipes.) That's why I wasn't surprised when our latest cooking class, "Quick Fix Healthy Meals" filled up within minutes. I teamed up with my dietitian friend, Maureen Doran, to teach the class. Last week I taught an evening cooking class in the Betty Crocker Kitchens. Instead of a demo, we tried a hands-on class where participants prepared recipes, asked questions, learned new techniques and sampled all of the recipes. 16 women signed up, all wanting to cook more healthy. They were employees, Moms, daughters or friends of employees. (Not many people get to cook in the BCK, so they knew from the start that this was something special.)
