Biscuits Make the Meal
by jillbcooks 11/17/2010 5:57:00 PM

Some people have arbitrary rules about what makes a meal. For example, my husband doesn’t really like sandwiches as a meal, and his definition of a “square meal” is more traditional with meat and potatoes.  For me, the difference between eating simply and quickly (like leftovers, pizza, or soup) is bread.  I don’t have bread with dinner at home all that often, but I made these biscuits to go with potato soup the other day.  This recipe makes many biscuit...

The Challenge: Pantry-Only Recipes
by CateC_BettyCrocker_MOD 10/31/2009 12:01:00 PM

Okay, I admit it. I am in love with those 10 for $10 deals at the supermarket. I’ve found myself saying on more than one occasion, “I’m sure I’ll need 10 cans of olives sometime or another.”I used to think my family was unnecessarily strategic for having such a well-stocked pantry (Who can think ahead like that?)…until I moved to college and realized the benefits. Since then, I’ve followed in my family’s footsteps and prided myself on having enough food for when I’m feeling creative in the kitchen. When ...

The Challenge: $25 and Betty Crocker Coupons
by CateC_BettyCrocker_MOD 10/17/2009 11:00:00 PM

When I was younger, my mom tasked me with coupon maintenance. She would circle the coupons in the Sunday paper. I would cut them out, file them away in her coupon organizer and keep it updated. Though this was one of my favorite weekly chores, I didn’t really embrace it again until I was married. Yet, I gave up on this weekly savings ritual because we stopped receiving the Sunday paper (which I now realize was ridiculous). When I was challenged to see what meals I could make with Betty Crocker coupons and just $25, I was excited to fall in love with coupon clipping again. My goal was to remind myself why coupons are worth the time, planning and maintenance. F...

Pick Pasta for Perfect Purpose: Orecchiette
by jillbcooks 10/13/2009 9:10:00 PM

When it comes to pasta, my husband loves spaghetti.  I have to say that it is my least favorite type of noodle.  It is messy, hard to eat, and I love chunky sauce, which spaghetti does no favors for.  Enter my new favorite pasta shape: orecchiette.  It comes from the word for ear in Italian, and is translates literally as “little ears.” The pasta is round with a concave surface, which catches tasty bits of sauce, meat or vegetables.  I like that orecchiette easier to eat as well, since it can b...

Breaking News: Kids Eat Twice As Many Vegetables
by jillbcooks 3/3/2009 8:08:00 AM

I read a news story yesterday about children and vegetables that was fascinating.  My first business—which offered cooking lessons for kids—was called Picky Eaters, so I was regularly invited by groups to give talks about how to get finicky kids to eat a wider variety of foods.  Parents were always seeking hints and tricks to get children to try vegetables, specifically. According to the study featured in the news story, “186 four-year-olds were given regular carrots and, on other lunch days, they were given the same ...

Make a New Year’s Resolution to Reclaim the Family Dinner Table
by jillbcooks 1/1/2009 10:15:00 AM

Getting dinner on the table and gathering the family to enjoy it together is no simple task for any busy family.  Work, traffic, sports, play rehearsal, Cub Scouts, and all the stresses of daily life make cooking seem more challenging than ordering pizza and devouring it while flipping on the television while other family members retreat to homework, video games, exercising or the multitude of activities that keep busy families on the move. If your family is anything like mine, it takes everyone’s efforts to pitch in and get things done around the house.  Dinner is no exception. Kids can share in kitchen duty, and probably would do so happily.  Cooking together...

The Kindness of Neighbors
by Heidi at Betty Crocker 5/7/2008 3:39:00 PM

Last Thursday I had just enough time to let my dog out after work before meeting my friends AC and Luke for happy hour at a local drinking establishment. We imbibed in a cocktail or two before heading home. I was not very hungry and had no intention of making anything other than toast to eat when AC and Luke kindly offered to bring all the makings of dinner over to my house (they live a block away).  ...

Happy New Year!
by Heidi at Betty Crocker 1/2/2008 4:25:00 PM

I gotta be honest—I’m a little "fooded out" at the moment. (Yes, I know that's not a word. Cut me some slack. The cogs in my brain are a little rusty after being on vacation.) I haven't been cooking or baking much lately, yet it feels like I've been surrounded by food 24/7. Last night after yoga class I came home, sliced up a tomato, drizzled it with Italian salad dressing and called it dinner. (The salad dressing was homemade, so I think I deserve a few points for that.) I would have killed for fresh mozzarella but I didn't have any on hand and it was so flippin' cold outside I wasn't about to get in ...

Shortcut Supper
by Heidi at Betty Crocker 11/7/2007 10:36:00 AM

I generally don’t put much effort into making myself dinner during the week. After all, it’s just me (a sad commentary on my self-esteem, I know). At least two nights a week I whip together a meal using the following method: I spread pizza sauce (I love the squeeze-bottle kind) on a flour tortilla. Then I top the tortilla with shredded mozzarella cheese and pepperoni slices or green olives, depending on my mood. I bake the pizza right on the oven rack about 7 minutes, or until the cheese melts. Viola!—A personal pizza, no delivery guy needed. Another bonus? I only dirty a cutting board, pizza cutter a...
