All-American Food: Fried Chicken
by AndiatBettyCrocker 3/21/2011 7:39:00 AM

What would you choose to serve as an All-American meal to a guest from another country? Julie (visting from France) and Audrey at Audrey and Rusty's dinning room table. Julie worked at General Mills for a few months, here from France. My friend, Audrey and I met Julie at our French class. Before she returned to France, Audrey and her husband Rusty invited Julie and us over for an All-American dinner. Rusty decided to make his mother’s fried chicken recipe with gravy and mashed potatoes....

Comfort Foods
by AndiatBettyCrocker 1/3/2011 7:48:00 AM

The holidays are over now and we are all getting back to our routines. It’s still winter in Minnesota and really cold outside. The days are too short and the nights way too long. If this is sounding a bit dismal to you as it does to me, maybe you need a little Comfort—Food, that is. Cooking can be comforting to those of us who really like to cook, and eating comfort food* is even better. Over the holidays I made Rustic Italian Chicken—a dish with all the ingredients for a "comfort meal" for me: tomatoes, chicken, pasta&...

What's Popular Now?
by jillbcooks 3/11/2010 7:13:00 PM

If you haven’t noticed, the design of BettyCrocker.com has changed recently.  The look and placement of features on the site has changed a bit, and new features have been added.  My favorite new feature is the listing on the lower right of the page of the most popular searches on the website.  It is fascinating to see what other cooks are up to in their kitchens. Here are the top searches from today:st. patrick'stop-slow-cookereaster-sensational-sidesgrasshopper fudge cakechicken pot piemeatloafchickenChocolate-Cheerios-Treatsbanana breadcupcakes I thi...

Cook for a Day, Eat for a Week
by jillbcooks 1/16/2010 7:59:00 AM

I like to cook for a day and eat for a week.  Lately, I have been cooking chicken breast and using it to prepare meals in advance.  While there are many ways to cook chicken, since I always seem to forget to thaw it (I buy in bulk and freeze it), I have found that the best way for me to prepare it is in the slow cooker.  I just put the frozen chicken breasts in the slow cooker, turn it to high and let it cook through, which takes about 4-5 hours. Then, I let it cool briefly before refrigerating it.  Then I use the cooked chicken to prepare meals—lunches and dinners—in advance.  This week I am making:...

Weekly Challenge: 2 Chickens, 5 Dinners and a $25 Budget
by CateC_BettyCrocker_MOD 11/7/2009 10:00:00 PM

As much as I like to be in the kitchen cooking up a storm, there are a few culinary tasks that I dread. One of them is touching and cutting raw meat because sometimes it’s slimy and requires lots of hand washing. So thanks to supermarket convenience, I’ve always bought the pre-packaged and trimmed meat. In fact, the guys at meat counter were kind enough to cut the meat for my Slow-Cooked Hungarian Stew in ¾ inch pieces. But convenience costs a pretty penny. To get the biggest bang for my buck in this week’s challenge, I overcam...

Feel the Burn
by Heidi at Betty Crocker 9/15/2008 9:54:00 PM

AC called me last Wednesday night and asked if I was in the mood for a “cooking adventure.” It sounded better than eating a frozen pizza by myself so I agreed to help her make a recipe. The recipe was one she’d made before. It was called Red Chile-Braised Chicken with Potatoes and Greens and it was from the cookbook Rick Bayless’s Mexican Kitchen. When I ...

Getting ready for Memphis
by Hurricane Mike 5/13/2008 4:06:00 PM

Memphis in May - So many things to get together still. We hire a company now to do the flooring and tent that will be ready this weekend. We used to do this ourselves but we are either older or smarter. They also supply the tables and chairs. We will arrive on Tuesday with our cookers / refrigerator and start the "move in process." Wednesday we'll finish the landscaping in front of our booth. Right now it's all about gathering up our "BBQ Stuff" which seems to fill more and more storage totes every year. For the next few days I will definitely stay away from pork. Last night we went ...

The Kindness of Neighbors
by Heidi at Betty Crocker 5/7/2008 3:39:00 PM

Last Thursday I had just enough time to let my dog out after work before meeting my friends AC and Luke for happy hour at a local drinking establishment. We imbibed in a cocktail or two before heading home. I was not very hungry and had no intention of making anything other than toast to eat when AC and Luke kindly offered to bring all the makings of dinner over to my house (they live a block away).  ...

Cinco de Mayo
by AndiatBettyCrocker 5/1/2008 3:05:00 PM

If you're like me, any excuse for a party will do. Next Monday is Cinco de Mayo which is a holiday that is celebrated in only some regions of Mexico and the U.S. It commemorates the victory of Mexican forces over French forces in the battle of Puebla on May 5, 1862. If you don't have time to plan a Mexican-themed party this weekend, ...
