We took a few vacation days and spent Memorial Day week at our cabin. During the week, we were invited to a friend’s home for dinner and I volunteered to bring an appetizer that we could enjoy at the beach. It’s quick and easy to make, and colorful too.
Arrange shredded romaine lettuce in a bowl (or on a fish platter!).
Mix sour cream, mayo, and cooked bacon and spoon over the lettuce.
Top with chopped tomatoes...

One of my refrigerator drawers is full of those small cucumbers I’ve been getting them from the CSA that I joined. (I blogged about the CSA on July 9th.) I probably won’t be making pickles this fall and so I’ve been trying to think of more ways to use these cucs in addition to putting them in tossed salads.
When friends invited us over for dinner and asked us to bring an appetizer, I looked in my recipe clipping files and found a recipe for Smoked Salmon and Cucumber Squares. They were the perfect start to a grilled-chicken dinner on a late summer night.

Have you seen the commercials for Bel Gioioso Unwrap & Roll Fresh Mozzarella Cheese?
The directions on the 12-oz package are to “unwrap and unroll”. When I did that, the edges of the one I had were a little ragged.

It was a cool (temps in the 50s in July!) and overcast week that Jack and I spent at our cabin. We didn’t let the weather stop us from having a nice vacation though. In fact, we invited some friends to join us for the weekend. Here is a photo of our cabin taken from across the lake. The big building on the left is our garage.

I tasted these BLT appetizers recently at a restaurant and I'm going to try to make them for guests who are coming up to our cabin this week. They can't be that difficult to make, can they? They start with bread brushed with some mayo, and then they are topped with lettuce, cooked bacon and cherry tomatoes. I think that the tomatoes were roasted in a slow oven to dry them up, just a little. Since Jack and I love BLT sandwiches in the summer for dinner, I'm sure these little "bites...
