I love fresh strawberry pie. When I was in high school, Nelson's Family Restaurant in Richfield (MN) became famous for their fresh strawberry pie. It was piled high with fresh strawberries, held together with a strawberry glaze and topped with lots of whipped cream. When I think of spring desserts, I think lemon.  After looking at lots of recipes for lemon desserts recently, I decided to make some homemade lemon ice cream to serve to our guests, after a dinner we hosted at our cabin. I rejected the recipes that had you boil lemon peel and in a simple syrup for 20 minutes and then strain that mixture. Some used lemon juice, but I knew those would be too sour for me.
