I have been resisting turning on the air conditioning in the day, which also means that I have been resisting turning on the oven, since my kitchen really warms up when it is on. Instead, I have been using our slow cooker.
My husband had a group of friends over for dinner last night, so I used the slow cooker to cook for a crowd. On the menu was Italian Beef Sandwiches. If you have never had Italian beef, it is chuck roast cooked long and low in liquid, with giardiniera (spicy Italian pickled vegetables), and then shredded and served on a crusty roll with provolone cheese.

If you haven’t noticed, the design of BettyCrocker.com has changed recently. The look and placement of features on the site has changed a bit, and new features have been added. I like to cook for a day and eat for a week. Lately, I have been cooking chicken breast and using it to prepare meals in advance. While there are many ways to cook chicken, since I always seem to forget to thaw it (I buy in bulk and freeze it), I have found that the best way for me to prepare it is in the slow cooker. I just put the frozen chicken breasts in the slow cooker, turn it to high and let it cook through, which takes about 4-5 hours. Then, I let it cool briefly before refrigerating it.

There are some polemic topics that seem to divide people. Are you a dog or cat person? A vanilla or chocolate ice cream fan? A slow cooker fan or a cook who scoffs at the thought of cooking in one?
Slow cookers are often associated with homey comfort foods rather than gourmet meals. One of my favorite cookbooks is Not Your Mother’s Slow Cooker Cookbook, which offers more innovative recipes than those that give slow cookers a bad rap.
