I'm so happy it's pumpkin season, because it means that my friend Annie, will be making her delicious Argentinean Beef Stew in a Pumpkin. In fact, she made it last weekend and I ate two helpings! It's really a beef stew filled with lots and lots of veggies including: onions, tomatoes, green pepper, potatoes, sweet potatoes and corn. Plus you get to eat the cooked pumpkin, which tastes very much like butternut squash to me.

Until this week, we have been enjoying summer temperatures (in the 80s) in the Twin Cities but the weather has changed and the highs today are expected to be in the mid 50s. With the cooler temps, I immediately start thinking about making soup for our meals and last weekend, did just that. We invited friends over for a simple lunch with Curried Pumpkin Soup and Caesar Focaccia Subs.

One fall many years ago, I was given lots of pumpkins as a gift. At the time I was living in a big old house in St. Paul with six friends. For weeks we used them as decorations on our dining room table, in our family room and well, all over the house. The night before Halloween we carved some of the pumpkins into jack-o'-lanterns.
