Fresh Blackberry Croustade
by AndiatBettyCrocker 6/23/2011 9:26:00 AM

A croustade is an edible container, often holding savory mixtures. This dessert version uses a pie crust as the container and it is filled with fresh summer blackberries, mixed with a little sugar and flour.   Here is the one I made for dinner guests at our cabin. We served it with homemade vanilla ice cream. Fresh Blackberry Croustade Prep Time: 10 MinutesS...

Elephant Ears Pastries
by AndiatBettyCrocker 4/4/2011 5:19:00 AM

Some bakeries called these large, flat, crisp and cinnamony pastries Elephant Ears and others call them Crispies. Kathy (Food Editor) is holding an Elephant Ear made from a recipe we developed in the test kitchens recently. We went to work to develop this recipe because of a request from a visitor to our Community board in February:  I've been looking in vain for a recipe for a popular item in Minnesota bakeries...

Shamrock-Topped Chicken Pot Pies
by AndiatBettyCrocker 3/16/2011 5:26:00 AM

"Little chefs: Children start to cook younger than ever"  was the title of an article I read recenlty online. Based on research done in the UK, the article continues on, "In fact, on average they now rustle up their first meal at only seven--five years earlier than their parents' generation did." My son Jason, never liked to spend much time in the kitchen with me when he was growing up but now, he does a lot o...

Strawberry Pie
by jillbcooks 7/4/2010 6:32:00 PM

The other day I posted about how much I love to bake and eat pies.  Here is another installment in my tribute to pies.  In case you are looking for a recipe to bring to a get-together, this one is a keeper.  It is a cross between pie, cobbler and crisp, and it is spectacular with vanilla ice cream (we just got an ice cream maker, so I plan to post about it soon!).  Strawberry Pie Pie Filling1 quart fresh strawberries, hulled and quartered¼ cup brown ...

Olympics Inspired Pot Luck Party
by jillbcooks 2/11/2010 4:17:00 PM

I am invited to an Olympics themed party tomorrow evening to celebrate the beginning of the Vancouver 2010 games.  We are going to eat, visit, watch the Opening Ceremonies and sign up for a “fantasy Olympics” (think fantasy football) contest.  Each of us is bringing a dish to share.  The host assigned each of us a country, and I was lucky enough to draw Canada.  My mom is Canadian, so lots of our favorite family dishes are traditional Canadian ones.  I am going to bring tourtiere, which is spiced French Canadian meat pie.  I am cheating and u...

Grandma’s Pies
by AndiatBettyCrocker 10/9/2008 1:23:00 AM

There are pie bakers and then there are PIE BAKERS! When Grandma Mary Jane C. came to Minneapolis (all the way from Kansas) for her grandson’s wedding, she brought with her 14 pies—all frozen on dry ice. She baked the pies for a gathering on the day after the wedding. The pies weren’t all the same flavor either—which would have made her work a lot easier. Instead she made: blackberry, cherry, pecan, apple, peach, strawberry-rhubarb and blueberry pies. And, these are just the ones that I saw and tasted (the rest were still in the freezer). My favorite was her Blackberry Pie....

Peach and Raspberry Crostata
by AndiatBettyCrocker 9/23/2008 3:00:00 PM

I’m occasionally asked to develop a menu for dinners at our church. Last weekend, we had a dinner with an Italian theme. For one of the desserts on the menu, I developed a recipe to use the delicious Colorado peaches that are so good right now.  A crostata is an Italian baked dessert tart, and a form of pie. It is traditionally prepared by folding the edges of the dough up slightly over the fruit filling, creating a more “rough” look, rather than a uniform, circular shape.  ...
