A croustade is an edible container, often holding savory mixtures. This dessert version uses a pie crust as the container and it is filled with fresh summer blackberries, mixed with a little sugar and flour.
Here is the one I made for dinner guests at our cabin. We served it with homemade vanilla ice cream.

Some bakeries called these large, flat, crisp and cinnamony pastries Elephant Ears and others call them Crispies. Kathy (Food Editor) is holding an Elephant Ear made from a recipe we developed in the test kitchens recently.
We went to work to develop this recipe because of a request from a visitor to our Community board in February:

The other day I posted about how much I love to bake and eat pies. Here is another installment in my tribute to pies. I am invited to an Olympics themed party tomorrow evening to celebrate the beginning of the Vancouver 2010 games. We are going to eat, visit, watch the Opening Ceremonies and sign up for a “fantasy Olympics” (think fantasy football) contest.

There are pie bakers and then there are PIE BAKERS! When Grandma Mary Jane C. came to Minneapolis (all the way from Kansas) for her grandson’s wedding, she brought with her 14 pies—all frozen on dry ice. She baked the pies for a gathering on the day after the wedding.
The pies weren’t all the same flavor either—which would have made her work a lot easier. Instead she made: blackberry, cherry, pecan, apple, peach, strawberry-rhubarb and blueberry pies. And, these are just the ones that I saw and tasted (the rest were still in the freezer). My favorite was her Blackberry Pie....

I’m occasionally asked to develop a menu for dinners at our church. Last weekend, we had a dinner with an Italian theme. For one of the desserts on the menu, I developed a recipe to use the delicious Colorado peaches that are so good right now.
A crostata is an Italian baked dessert tart, and a form of pie. It is traditionally prepared by folding the edges of the dough up slightly over the fruit filling, creating a more “rough” look, rather than a uniform, circular shape.
