Last week I had guests—my mom and aunt—in town and, inevitably, one of their requested destinations was The Mall of America. If you love malls, it is the place to be, with hundreds of shops and restaurants and plenty of people watching. Baking Focaccia and Ciabatta Bread
I love any kind of bread, and to me, a meal doesn’t feel like a meal without some bread. I tend not to buy bread from the bakery on the grocery. Focaccia is $3.99 for a smallish loaf at the grocery store where I shop (it’s not a fancy place, either). Focaccia is a flat bread, usually flavored with olive oil and topped with salt or herbs. I’ve been working on developing an easy focaccia recipe. My experimentation began when I saw a recipe in a popular food magazine this past summer for a focaccia that was topped with tomatoes, garlic, rosemary and basil. That sounded delicious to me but because it was summer, I didn’t want to take the time to make the dough, do the kneading and wait for a couple of risings and so I decided to start by using frozen bread dough to save time and work.
