Along the warm winter we have had in Minnesota this year and the earlier than usual spring temps, it appears that the the opening of the fishing season may start early too.So, it's not too early to gather up your favorite fish recipes and decide which ones you will want to make again this year. Here is a recipe that calls for Walleye—one of my favorite fresh-water fishes. And of course, if you don't fish, you can always stop at your supermarket for some fresh Walleye (or your favorite fish) to use in these tacos....

The Rojo Mexican Grill opened last night in St. Louis Park, Minnesota and Jack and I met friends there to check it out. Menu listings included: Appetizers, Cheese Crisps, Salads and Soups, Tacos, Enchiladas and Entrees. With only five or so choices under each, we found the shortness of the menu to be a little surprising for such a large, open and contemporary restaurant.
