Cherry-Strawberry Pie
by AndiatBettyCrocker 1/26/2011 1:45:00 PM

Did you know that pies are “hot?” Of course some pies can be served hot with a scoop of ice cream which starts to melt over the top of every bite—Yum! But I’m not talking about pies that are served hot—I’m talking about hot food trends. “If last year’s major food trend was the cupcake, then 2011 will be the year of the pie,” Sharon McCAmy wrote in the Alexandria A...

Slow Cooker Short Ribs in Red Wine with Mashed Potatoes
by AndiatBettyCrocker 1/24/2011 11:08:00 AM

I invited eight friends over for dinner on Saturday night to our cabin in northern Wisconsin, and surprisingly, everyone could come. Because of the sub-zero temps, we decided it would be safer to drive up on Saturday morning rather than on Friday night.  As a result, I had to come up with an easy menu that I could start around noon and serve by 6:00pm. My solution was to use two slow cookers: one for Short Ribs in Red Wine and one for the Ultimate Slow Cooker Mashed Potatoes (keep reading, the recipes are below). Here we are, 10 hungry people, getting ready to d...

Comfort Foods
by AndiatBettyCrocker 1/3/2011 7:48:00 AM

The holidays are over now and we are all getting back to our routines. It’s still winter in Minnesota and really cold outside. The days are too short and the nights way too long. If this is sounding a bit dismal to you as it does to me, maybe you need a little Comfort—Food, that is. Cooking can be comforting to those of us who really like to cook, and eating comfort food* is even better. Over the holidays I made Rustic Italian Chicken—a dish with all the ingredients for a "comfort meal" for me: tomatoes, chicken, pasta&...

Chicken Pot Pies with Biscuits
by AndiatBettyCrocker 1/6/2010 11:36:00 AM

It's really cold here in Minnesota and it's supposed to snow again tonight. These are the nights when pot pies really "hit the spot" because they are a warm meal-in-one dish and very nourishing. Blake and his dad, Jason, helped make some individual Chicken Pot Pies with Biscuits for our dinner at the cabin one night, just before Christmas. Here they are cutting each biscuit into sixths.  Blake gets to put the biscuit wedges on top of each ...

Use Up Leftovers: Beer Cheese Soup
by jillbcooks 11/4/2009 6:12:00 PM

Inspired by fellow blogger Catherine (and trying to stick to my goal to eat at home more often), I have been looking in my pantry, refrigerator and freezer as I plan dinners.  I try to use up what I’ve got, and I like to look at it as a little challenge.  A few weeks ago we had guests over for dinner, and one of the guests brought beer, which my husband and I very rarely ever drink, so there were a couple bottles hanging around in the refrigerator. It occurred to me that even though I might not drink them, I might be able to cook with them.  With the clock “falling...
