I invited eight friends over for dinner on Saturday night to our cabin in northern Wisconsin, and surprisingly, everyone could come. Because of the sub-zero temps, we decided it would be safer to drive up on Saturday morning rather than on Friday night. As a result, I had to come up with an easy menu that I could start around noon and serve by 6:00pm. The holidays are over now and we are all getting back to our routines. It’s still winter in Minnesota and really cold outside. The days are too short and the nights way too long. If this is sounding a bit dismal to you as it does to me, maybe you need a little Comfort—Food, that is.

It's really cold here in Minnesota and it's supposed to snow again tonight. These are the nights when pot pies really "hit the spot" because they are a warm meal-in-one dish and very nourishing.
Blake and his dad, Jason, helped make some individual Chicken Pot Pies with Biscuits for our dinner at the cabin one night, just before Christmas.

Inspired by fellow blogger Catherine (and trying to stick to my goal to eat at home more often), I have been looking in my pantry, refrigerator and freezer as I plan dinners. I try to use up what I’ve got, and I like to look at it as a little challenge.
