Apple Crisp Recipes
by AndiatBettyCrocker 11/3/2011 10:40:00 AM

Fall is a beautiful time of the year in MInneapolis and to prove it, this is the view from our test kitchens last week. Speaking of the test kitchens, we recently  had an apple tasting and sampled eight different apples a member of our staff brought in. One of them was a relatively new (introduced in 2009) hybrid brand, named SweeTango®. The Sweetango apple (a cross between a Honey Crisp and Zestar) was bred at the University of MInnesota to be sweet and tart at the same time. These large, pretty apples are crisp an...

Warm Cheese and Apples Partner for a Fall Salad
by AndiatBettyCrocker 10/13/2010 12:31:00 PM

I recently ran across this recipe for Green Salad with Apples and Warm Hazelnut-crusted Goat Cheese in a September 1998 issue of Bon Appetit magazine. The article was about chef Charlie Trotter and what he cooks at home. Salads topped with warm cheese are wonderful to serve in the fall. Have you ever served a tossed green salad with warm cheese on the top? Green Salad with Apples and Warm Hazelnut-crusted Goat Cheese 4 small red onions, thinly sliced½ cup Sherry win...

Behold: The Ciderdoodle
by jillbcooks 9/10/2010 4:40:00 PM

I am a connoisseur of cookies the way some people are connoisseurs of wine (seriously, my next big book project is going to be an ethnographical study of cookies).  The experience of being taken aback by eating a cookie, for me, is a state that is difficult to achieve. I have a favorite cookie—a butter cookie made by a pastry shop in Little Italy in Baltimore—the butter flavor packed into the cookie (and the high content of butter) is nothing short of a miracle. If I feel sad about something, I will literally think about these cookies to cheer myself up. But, it happened. I was taken aback by the deliciousness of a cookie recently. When I was chewing and tasting t...

Apples and Cheese
by AndiatBettyCrocker 10/12/2009 12:32:00 PM

Before I get to the topic of this post on Monday, October 12th, I feel as if I must share with you something about the weekend weather, here in Minneapolis. Last Friday with temps in the upper 20°s and snow overnight, it seemed too early for winter to begin. It is snowing again today and the forecast is for at least 2 inches more. This is the scene outside one of the windows, here at General Mills.Let me know what the weather is like where you live today (in the comments box) if you aren’t living in this northern tundra we call, Minnesota. I was going to start by saying that using ap...

Kids in the Kitchen: Charoset
by jillbcooks 4/8/2009 1:31:00 PM

Much of the Seder is about the bitterness and sorrow of life in Egypt under Pharoh.  While charoset looks like the mortar that the Israelites used to build Egyptian cities, it tastes sweet to celebrate being freed from Egypt.  Making charoset is a great activity for children, since it is simple and uncooked.  Even small children can help with mashing the apples.  Older children can practice measuring and following directions.  When cooking with kids, it is often easier to use gadgets designed for convenience.  Peeling and coring apples is made easy with a ...

New Apple Varieties
by AndiatBettyCrocker 3/19/2009 8:42:00 AM

I had apples on my grocery list last week and I usually don't spend too much time trying to decide which ones to buy. But, at my local supermarket, I noticed new varieties of apples I’d never heard of before like: Jazz, Pacific Rose and American Cameo. Have you heard of these apples? I bought some of these ap...

Fresh Apples
by AndiatBettyCrocker 10/30/2008 1:12:00 PM

Blake's mom found some tiny little apples at the supermarket that are just his size, for snacking. Who doesn’t like to munch on crisp, juicy, fresh apples? Of course I love apple desserts in the fall too. One of my favorites is Chunky Apple Cake with Browned butter Frosting. I don’t know what I like better: biting into the big chunks of apple in the cake or the generous amount of browned butter frosting on top of the cake. [Keep Reading]

Tarte Normande aux Pommes, aka Apple Tart
by AndiatBettyCrocker 11/8/2007 10:35:00 AM

My refrigerator drawer was bursting with apples after a visit to an orchard in Bayfield, Wisconsin. I wanted to use some of the apples in a dessert last weekend and remembered my favorite recipe from French class, La Tarte Normande, which is basically an apple pie with custard.  ...
