Use Up Your Tomatoes

I hate throwing away food.  I like to try to use up what I’ve got and view it as a challenge.  I had a couple large tomatoes that were a bit beyond ripe.  I decided to make a simple sauce with them.  It literally took less than five minutes. First I cut the tomatoes in half and squeezed out the seeds.  I roughly chopped the tomatoes and added them to a minced clove of garlic and a half teaspoon of olive oil that I already had working in a pan over medium heat.  I let the tomatoes brown a bit and tossed in a bit of dried basil, red pepper flakes and pepper.  ...

We took a few vacation days and spent Memorial Day week at our cabin. During the week, we were invited to a friend’s home for dinner and I volunteered to bring an appetizer that we could enjoy at the beach. It’s quick and easy to make, and colorful too. Kristen with Veggies From Her Garden There is nothing like a fresh tomato from the garden. They are sweet, juicy and have that wonderful garden-fresh flavor. We are eating them like apples around here because Kristen (Assistant Food Editor) is bringing some in, nearly every day, from her garden.
