Lime-Mango Breakfast Parfaits
by AndiatBettyCrocker 5/22/2012 3:46:00 PM

Perfect for a quick summer breakfast, these light but filling breakfast parfaits pair the flavors of mangos and lime for a tropical taste treat. Using mangos from a jar, takes away the guess work of trying to decide if they are ripe enough to use, and you don't have to peel them or cut away the flesh from the large, flat seed in the center of each one. Lime-Mango Breakfast Parfait...

Stuffed French Toast with Scrambled Eggs and Ham
by AndiatBettyCrocker 1/24/2012 10:59:00 AM

Here's a fun, new way to make French toast --stuff it. Many stuffed French toast filings are sweet but I wanted to make one that wasn't. So, I made some scrambled eggs with ham and cheese and used that as a stuffing. The result was this hearty breakfast, shown in the photo below.  Start by scrambling 4 eggs. Add some ham and cheese. Spoon the egg mixture onto 4 slices of white bread. White, soft bread works the best because it sticks together when you cut it. ...

Bev’s Overnight Egg and Sausage Bake
by AndiatBettyCrocker 8/15/2011 12:43:00 PM

Bev’s Overnight Egg and Sausage Bake Our wine-tasting group (4 couples) spent a weekend at Bev and Gary’s beautiful home on the St. Croix River. We arrived on a Friday night and tasted Italian wines from the Amalfi Coast area of Italy and paired them with Italian foods. We chose the Italian theme because we are all traveling to Italy in just 30 days—but who’s counting?! For breakfast on Saturday morning, we enjoyed an egg bake that Bev made on Friday before we arrived. I love to make recipes that c...

by AndiatBettyCrocker 8/16/2010 3:13:00 PM

My grandson, Blake loves pancakes and sausages and so when he comes to the cabin, that's what we make for breakfast. I put Blake and his mom (Katie) to work, cleaning and slicing strawberries to serve with our pancakes. Do you know what this is called? It’s called a strawberry huller. Three-year old Blake (in his Spiderman pajamas) used a strawberry hu...

Banana Pancakes for a Valentine’s Day Breakfast
by AndiatBettyCrocker 2/24/2010 8:29:00 AM

The weekend before last, we awoke to a frosty world outside. The trees and bushes were all beautifully white, giving the feel and look of a winter wonderland. This was the morning, we left home to travel to the Oakenwald Terrace B&B in southern Minnesota—just nine miles south of Rochester, MN. We were celebrating our wedding anniversary along with our friends, Jim and Frankie. We have celebrated with them ever since our first anniversary, 34 years ago. (Our anniversary is on February 1...

Swedish Pancakes - a Breakfast for Olympic Enthusiasts
by AndiatBettyCrocker 2/22/2010 6:57:00 AM

Here is a photo and note that Jeff, a co-worker, sent to me over the weekend:HI Andi--Just wanted to send you a photo of the Sunday breakfast idea I had for my kids. My youngest son's (Aaron's) favorite Sunday morning meal is Swedish Pancakes with bacon on the side. To give it a little "Olympic" flavor this morning as we were watching the morning recap of the weekend, my oldest son (Bennett) created international flags we taped to toothpicks and decorated his brother's plate with an Olympic mascot "Quatchi" before he woke up. It was a nice surprise and a new way to bring wow to one of o...
