We aren't sure why this rich, buttery, warm and gooey coffee cake is called Monkey Bread. We do know that individual balls of dough are rolled in butter and/or cinnamon and sugar and then placed into a fluted cake pan on top of each other. Grandson Blake stayed with us for a couple of nights last week while his parents went to the hospital to bring home his new baby brother, Finn. As always when we get a chance to spend time with Blake, we find some time to cook. One morning we used a Tovolo Pancake Pen to make some fun pancakes. Cowboy Casserole is the last recipe in a series of 5 Easy Meals for week-night dinners. With only 7 ingredients (all of which you probably have on hand), this is sure to be a meal that your family will like.
