Today is the first day back to school for many kids. When they arrive home, they will be hungry but it may be too early for dinner. Here is a great after-school snack that can be stored in the refrigerator, just waiting for your kids to find.

Blake likes these Antipasti Snacks, especially when I add his favorite tiny dill pickles to the mix.
I'm still sneaking in Italian-themed recipes to these posts since it's now only eight days before we leave for Italy. The word antipasto, in Italian, means: "before the meal," and it refers to hot or cold appetizers. An assortment of antipasti could includ appetizers such as cheese, cured meats, olives, smoked fish and marinated vegatables.

Antipasti (After School) Snacks
Prep Time: 15 minutes
Start to Finish: 15 minutes
1/2 cup baby-cut carrots
1 tablespoon water
1/2 cup grape tomatoes
1 container (3.7 oz) whole petite kosher dill pickles (from a 4 pack)
2 sticks (1 oz each) string cheese, cut into 1/2-inch pieces
1 tablespoon reduced-fat Italian dressing
Place carrots and water in small microwave-safe bowl, cover with plastic wrap. Microwave on High 2 minutes; drain. Chill carrots in ice water, about 3 minutes; drain.
In small bowl, place carrots and remaining ingredients; toss to coat evenly.
4 servings (1/2 cup each)
Tip: Add any of your kid’s favorite ingredients such as cubes of any flavor cheese or fresh veggies from the garden such as bell pepper slices or sliced zucchini. Adults will like this snack too, and for them you might want to add green or black olives or canned button mushrooms.
