Edamame Garden Salad

Use fresh produce from your garden or local farmers' market for this pretty and fresh summer salad. The edamame adds a nice green color a little protein to an otherwise ordinary side salad.
Edamame Garden Salad
1 cup frozen shelled edamame, thawed
4 cups baby greens
½ cup julienne carrots (from a 10-oz bag)
½ cup diced red bell pepper
¼ cup cucumber, halved lengthwise, seeded, and sliced
4 radishes, sliced
½ cup purchased vinaigrette or Asian salad dressing
1. Cook edamame as directed on package; drain and rinse with cold water.
2. Place 1 cup greens on each of four salad plates
3. Layer remaining ingredients except dressing over greens. Top with edamame.
4. Drizzle salad dressing over each salad.
