I’m always looking for recipes that my grandson (Blake) can make and here is one that uses hard-cooked eggs to help use some of the dyed eggs you may have made for Easter.

Egg Salad Buns
I found this simple recipe in the Betty Crocker Kids Cook! cookbook.

There are lots of fun illustrations in the book.

Making these sandwiches is really easy. Just hard cook 6 eggs; peel and chop them. In a bowl, place the chopped hard-cooked eggs, chopped celery, pickle relish and mayonnaise.

Stir until ingredients are well combined.

Spoon egg salad mixture into slider buns; sprinkle with shoestring potatoes (for lots of crunch!).

Tip: I'll add a lettuce leaf or some shredded lettuce to the sandwiches the next time i make them for more color and even more crunch.
