Dijon-Parmesan Chicken Breasts

While nearly two-thirds of people in the U.S. believe they eat enough healthy whole grain in their diet, the reality is that just 5 percent of Americans get the three full daily servings (at least 48 grams) recommended by the U.S. Dietary Guidelines for Americans.
That was the finding of a General Mills study to better understand U.S. attitudes around whole grain and the gap between the amount of whole grain Americans should be eating and what they are consuming.

To make this recipe, simply mix crushed Fiber One® cereal with some grated Parmesan cheese, dried basil leaves, garlic salt and pepper in a bowl. In another bowl, combine an egg white and some Dijon mustard. Then, just dip chicken breasts into the egg white mixture and then into the cereal mixture. Bake at 400° for 20 to 25 minutes.

I used boned, skinned chicken thighs for Jack, which he prefers to chicken breasts. And for Blake (who came to the cabin with us over the weekend), I cut a chicken breast in cubes and made some healthy (non fried) "chicken nuggets."
