On Cinco de Mayo (the 5th of May) we now celebrate Mexican culture, food and music. This date actually commemorates the victory of the humble Mexican army over the world-powerful French forces in “La Batalla de Puebla” on May 5, 1862.
Since it is a weeknight, here are a couple of easy Mexican recipes you can make for dinner tonight.

For your main dish, serve Fajitas For Two.
