Spring has arrived in Minnesota and what better time to stir up a dish of Pasta Primavera? In the Italian language, the word “primavera” means spring and refers to the use of fresh vegetables as a garnish to various dishes.
Since asparagus is both Jack's and my favorite spring vegetable, I searched for recipes with asparagus in them. I found this Classic Pasta Primavera recipe full of veggies including: asparagus, mushrooms, zucchini, bell pepper and carrot.

I substituted rotini pasta for the fettuccine to make it easier for Blake to eat.....and he loved it! We had it as side dish with roasted chicken but it can also be a complete meal all by itself.

This Lean Pasta Primavera recipe is full of vegetables too including: mushrooms, broccoli, green onions, snow pea pods and cherry tomatoes.
