To make suet cupcakes, melt 1 cup shortening and 2 cups chunky peanut butter over low heat, then mix in 5 cups cornmeal. Fill cupcake tins and top with your choice of nuts, birdseed or dried berries. Cool in the refrigerator.
It was a dark and snowy Saturday at our cabin in northern Wisconsin. Winter seemed to have arrived overnight.

Since Blake had come "up north" with us this past weekend, we needed something fun to do on Saturday afternoon. What better day to make suet cupcakes for the birds which stay in Wisconsin all winter long? I needed more peanut butter, so Jack, Blake and I got into the car and headed to Jim's Bait (our only store for miles). We didn't see another car or truck on the highway.

Blake's parents forgot to pack winter glove for him, so his garden gloves worked just fine. Luckily, he had a winter jacket and new winter boots along.

Back at the cabin, Blake measured 1 cup of shortening into a measuring cup and then scooped it into a saucepan with some peanut butter. Measuring and scooping are really fun for him.

Papa Jack stirred in the cornmeal and then helped pour the suet into cupcake liners.
Blake sprinkled birdseed over each suet cupcakes.

He also added some currants over the top of each one. We made 23 suet cupcakes in all. I refrigerated them overnight to make them firm.

We put a couple of cupcakes on the tray of our birdfeeders and didn't have to wait very long to see these hungry birds.
