
Blueberry Crunch
(You can have this dessert ready for the oven in less than 10 minutes.)
1 pint fresh blueberries
2 tablespoons granulated sugar
2 teaspoons lemon juice
1 teaspoon ground cinnamon
½ cup quick-cooking oats
¼ cup firmly packed light-brown sugar
2 tablespoons all-purpose flour
3 tablespoons butter, softened
Whipped cream or vanilla ice cream, if desired
1.Heat oven to 375F. Combine berries, sugar, lemon juice and ½ teaspoon cinnamon in 1-quarat baking dish. Combine oats, brown sugar, flour and the remaining ½ teaspoon cinnamon in small bowl. Cut in butter. Sprinkle over fruit.
2.Bake 30 minutes or until topping is browned and fruit is bubbly (see photo below). Let stand 15 minutes before serving. Serve with ice cream or whipped cream.
