Could any ingredient be more popular than bacon, these days? We have been noticing recipes for Bacon Ice Cream and bacon in cookies, candies and more. The ice cream was really good – a combination of the rich, sweet cream with the crisp and salty bacon. Have you tried any of these interesting flavor combinations with bacon? Kristen (Assistant Food Editor) came up with the idea to send her friend who lives in New York, the Christmas gift of a homemade treat containing bacon, every month during the next year. (I hope she isn't reading this blog or Kristen's gift won't be a surprise!). On her list are such treats as: Bacon Fudge, Bacon Caramels, Bacon Marshmallows, Bacon Vodka (really?), and Bacon Pops.
A more familiar way to use bacon, of course, is in savory dishes. My daughter-in-law, Katie made the appetizers (below) at the cabin last summer. Because pears are so big and juicy at this time of year, these appetizers would also be nice to serve on Christmas Eve or on Christmas Day. Katie may have given me the recipe for the Bacon, Pear and Blue Cheese Canapés but I can’t find it at the moment. You can see in the photo what they looked like and believe me, they tasted great.

Bacon, Pear and Blue Cheese Canapés
Slices of pumpernickel bread
Pears, thinly sliced
Blue Cheese
Cooked bacon strips
Honey
Place bread slices on a serving platter. Layer with pear slices, blue cheese and cooked bacon strips. Drizzle honey over the tops of each canapé.
