Grill Mild Spring Onions on Father’s Day

The season for those deliciously mild onions, goes from mid-June to early September. They are sold under the names of Vidalia Onions (grown in Georgia), Walla Walla Onions (grown in the area of the Walla Walla Valley of southeast Washington and northeastern Oregon) and Maui Onions (grown on the Hawaiian island of Maui). They are medium-large onions with a sort of flattened-round appearance.

These onions are not actually higher in sugar than “regular” onions, but they are milder in flavor. They contain less of the acids that make you cry when you chop onions and have a higher water content, making them milder and juicier but not really sweeter than other onions. All science aside, Jack and I look forward to buying large bags of these onions at club stores—for just the two of us! We bought a bag a couple of weeks ago and have been eating them nearly every night for dinner in lots of ways: fried in a skillet and served over grilled steaks, in French Onion Soup, grilled with potatoes and other veggies and sliced thinly in salads and on sandwiches. Because of their high moisture content, they will spoil quickly, so plan to eat them in a couple of weeks or less, after buying them.
