After planning a mid-week dinner for friends, I needed to come up with a quick dessert. My goal was to have everything made-ahead and ready to serve when I got home since my guests were scheduled to arrive at our house shortly after I got home from work.
Here is the dessert I made. Can you help me figure out a name for it besides Easy Strawberry Dessert?
1. (I did this step the night before my dinner party.) Remove two refrigerated pie crusts from a package; place each on parchment paper and then on a cookie sheet. Sprinkle tops with coarse and/or granulated sugar. Cut each into 6 wedges. Bake at 450°F. for 8 to 10 minutes or until golden brown on top. Cool.

2. (When I got home from work, I finished the following steps.) Cut a quart of fresh strawberries in quarters; place in medium bowl until ready to serve. Add about 1/3 cup sugar and about 2 to 3 tablespoons, chopped, fresh mint leaves. I did this before we sat down to eat our dinner and left the bowl, covered with plastic wrap, on my counter at room temperature.
3. Whip and sweeten about a half pint of whipping cream.
4. To assemble: place one baked pie crust wedge on each of six dessert plates. Spoon strawberries over the crust. Spoon some sweetened whipped cream over the strawberries. Place a second pie crust wedge on top. I was going to garnish the tops of each dessert with more whipped cream and a mint leaf but in my rush to serve our desserts, forgot to do this.

I’ll make this dessert again because it was easy to make and tasted great, even if I do say so myself! Best of all I got to use some of the mint that is already taking over my garden again this year.
