Ukrainian Galumpkis

Have you ever heard of galumpkis? I hadn't until last weekend when we attended our nephew's Ukrainian-American wedding in Westfield, Massachusetts.  

At the reception for 300 guests, the tables were set with many wonderful cold salads, lox, a meat pâté and a plate with little fried foods that looked like a tiny Ukrainian versions of egg rolls and egg foo yong. After we were seated, bowls of mashed potatoes with a meat gravy, braised chicken pieces and the Galumpkis were served.

 

The Galumpkis are tiny appetizer size stuffed cabbage rolls that were filled with both ground beef and pork, rice, a little tomato paste and maybe some onions according to the bride's mother who is a caterer and prepared all of the food for this wedding. "You can make them any size", she told me. Here is a Glumpkis recipe that I found on the Foodnetwork that I can't wait to try.

I have been making Galumpkis since my mother handed down the recipe to me. Try rendering down some diced bacon, onion and salt and pepper and combine it with the raw hamburger and already made instant rice. I also add a little tomato sauce into this mixture. Steam your cabbage ( I usually have 2 heads rotating) just enough to start peeling the cabbage away and easier to handle when rolling. Put a handfull in each leaf and roll up like an eggroll. Layer in pan and cover with a layer of sauce. I will freeze these as is and take out and defrost and cook or cook at once in a 350 degree oven for about 1 1/2 hrs.

RE: Galumpkis....lol, I truly am keepin my finger's crossed that you didn't pick out an "UNRULY" head of cabbage! lol, I made normal size "pigs" (raised calling them that), and I do beleive I made up several new "O)^&&)($^:: ", TACKY words, I told my Hubby, in my 40 yrs. of makin "pigs", I had NEVER RAN ACROSS SUCH A _____..ummmm UNRULY,lol....head of cabbage, keepin my fingers crossed for you if was your first time!lol, Each time is a new "experience, lol" , just keep on rollin! ;) & I have yet to figure out a way to insure a GOOD head of cabbage! Tis all worth it in the end!;)
