I am so thrilled my recipe for “Chocolate Marshmallow Pillows” was selected as a finalist in the Mix It Up with Betty Cookie Contest! When I was creating and testing recipes for this contest, I brought my creations to a party at a friend’s house in order to get some feedback on the cookies. This cookie was far and away the biggest hit of the night! All my friends were raving about the ooey-gooey chocolate topping over the soft marshmallows and chunky double chocolate cookie. In fact, they were disappearing so fast that some of the guests started grabbing the cookies and hiding them around the house in order to save them and enjoy more of the cookies later! One friend put some on a plate and hid it behind the microwave. Another wrapped a few in napkins and put them way out of reach on top of the refrigerator. The host even snuck a few in a plastic baggie and put them away in his bedroom for safekeeping! I am so excited to give away the Box Tops for Education to my elementary school alma mater, Butterfield School. When I was in 4th grade at Butterfield there was a class assignment to start a “business” and I started a company called “Kristina’s Cookies”. Other students and their families purchased my cookie creations, and I even have a framed photograph with my “first dollar” earned from this business! It is amazing how all these years later life has come full circle and I can give back to my elementary school with the help of Betty Crocker and a cookie recipe.
