Each morning I have a bowl of hot, cooked steel cut oats with walnuts, dried cranberries, ground flax seeds, wheat germ, cinnamon and brown sugar added in. My all time favorite snack for when I am on the road is homemade trail mix in which I mix dark chocolate chips, walnuts and dried cranberries. Since I am a dietetic technician and I love to cook, I am always looking to make yummy recipes a little healthier. I had my “Aha” moment when I was making a batch of Betty Crocker Oatmeal cookies and noticed my bag of trail mix on the table. I swapped the margarine for a more healthy canola oil, which is a good source of Omega 3 fats as are the walnuts and ground flax seed. The wheat germ is an excellent source of vitamins and minerals. With cranberries and dark chocolate added, what more could you want? My boyfriend was my official taste tester and came up with the name.
