This recipe combines three of my all-time favorite flavors—cheesecake, coconut and fresh zesty lime- on a crisp sugar cookie crust, topped with a delectable cream cheese frosting. It’s a tropical vacation for the taste buds, and can be put together very quickly. My book club was the first recipient and judge of this dish, and it inspired more favorable comments than THE TRANSIT OF VENUS, our book selection.
