I came up with this recipe because my daughter loves coconut (like Mounds and Almond Joy candy bars). These are a cross between a cookie bar and that coconut bonbon candy we typically make during the holidays. You can leave out almonds, if desired. As the commercial says, “sometimes you feel like a nut, sometimes you don’t!” One variation we really love is to leave out the almonds in the filling and then sprinkle coarsely chopped smoked almonds over the chocolate topping. It adds that salty/sweet dimension. Why wait for the holidays to enjoy this favorite?
