Over the past year I fell in love with pistachio, which led me to spumoni ice cream…Delicious! I wanted to try and incorporate those flavors into a cookie. I had many different ideas of how to do that. So of course I had to test them out. I always seemed to bake cookies on Wednesday, so Wednesday became known as “Cookie Wednesday” around the house. My sister is very disappointed that “Cookie Wednesday” is no more.
