It’s fun and exciting to take one product, such as the Betty Crocker Sugar Cookie Mix and turn it into something completely unrecognizable such as a ginger cookie. I think it was the addition of the molasses that made the cookie richer tasting. And after several attempts at different types of lemon toppings, including lemon curd, I came back to a simple glaze. All of my tasters loved the addition of the crystallized ginger, so that the idea was a keeper!
