How to Make Lemon Berry Cheesecake Bars

Give regular cheesecake a twist with the fun and delicious additions of lemon and blueberries!

Sure, cheesecake bars are a foolproof, crowd-pleasing dessert. But why not make them stand out even more by stirring in citrus and berry flavors?

There are three parts to these little bars: the base, filling and streusel topping. Start with the base, which is a simple graham cracker crust with just a hint of lemon. You will need graham crackers, sugar, melted butter and lemon zest.

The best tool for the job is a food processor; just throw everything in and pulse until crumbly. (If you do not have a food processor, add the crackers, sugar and lemon zest to a plastic bag and pound until crumbs form; combine with the melted butter.)

Press the base into a pan greased with cooking spray; bake for about 10 minutes.

Wipe out the bowl of the food processor, and then make the filling. You will need cream cheese, eggs, lemons and sugar. Eventually, you will also need blueberries.

Just pulse everything together.

Pour the filling into the cooled graham cracker crust and top with blueberries.

Now for the topping. You will need flour, brown sugar and cold butter.

Mix it all together until crumbly; sprinkle on top of the cheesecake and bake for 35 to 40 minutes.

Let the bars cool completely before cutting. Enjoy!
