Carrot Coffee Cake

This simple-to-make breakfast treat has all the flavors of carrot cake.

The best thing about coffee cake is that you can use it as an excuse to eat dessert in the morning! You’d be hard-pressed to find a more classic treat than carrot cake. So why not enjoy it at breakfast instead of waiting until after dinner?

The recipe doesn’t call for too many ingredients. For the cake itself, you need Original Bisquick® mix, brown sugar, butter, shredded carrots and some spices. We used cinnamon, allspice and nutmeg because they are used in our favorite carrot cake.

The streusel topping calls for more Original Bisquick® mix, brown sugar, cinnamon, butter and a handful of chopped walnuts.

Start by preparing the streusel topping. Just combine everything until crumbly.

Put the cake ingredients in a large bowl and mix until blended. It comes together very quickly!

Pour the cake batter into a greased pan and sprinkle with the streusel topping. Bake for 18 to 22 minutes or until golden brown.

Allow the cake to cool completely. For the icing, you only need two ingredients: powdered sugar and milk.

Just stir them together until smooth. Drizzle the icing over the coffee cake and you’re done!
