Sometimes you want cake and sometimes you want pie. My Apple Pie Cake is both, making it a perfect addition to your Thanksgiving dessert table.
I have a confession to make: This cake came out of my desire to not make a pie crust. And not to have to run to the grocery store the night before Thanksgiving. I was planning on making an apple crumb pie and just did not feel like dealing with pie crust. I was tired, sick of cleaning my kitchen and so over washing dishes and ready to call it a night. So I took a look around my pantry and found a box of cake mix. Perfect, always a good place to start. I combined it with traditional apple pie filling ingredients and the rest is history. Sometimes the best ideas are born out of necessity, right? Gather your ingredients. In a small bowl, mix together flour, brown sugar and salt. Add butter, and rub together until it resembles a crumble. Set aside. Toss the apples with brown sugar, cinnamon and lemon juice. Make the cake batter according to the directions on the package. Pour the batter into a 9 x 13 pan that has been sprayed with cooking spray. Spread the apples over the batter. Spread the crumble over the apples. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Sprinkle the cake with powdered sugar and cut into squares.
