Comments: I made these using the Gluten-Free yellow cake mix as a base. I didn't have any mexican hot chocolate on hand so I tried the suggestion from another reviewer to use 8Tbs cocoa and it worked very well. I added 1/4tsp nutmeg and cinnamon, and a pinch of cipotle chillie powder. I had to add a little water when I added the butter/cocoa mix to the cake mix.
Definitely don't skip rolling the dough in the sugar as it balances the richness of the chocolate.
The cookies did not flatten as they cooked, which isn't a big deal, and they were a little crumbly made this way. I think I will use only 6Tbs cocoa next time. Still, they were deliciouse and the whole family raved! The kids asked if we can make these for Santa this year and we said absolutley! |

Comments: This cookie was a hit with everyone that tried it. I will make them again!The amount of mexican hot chocolate is a whole round disc. This is a very simple cookie to make, and worth the compliments!It is a keeper, different, and delicious! |

Comments: These cookies are outstanding! Make them with margarine instead of butter if you like the softer cookies. If you like them a little crispier, use the butter. |

Comments: These were wonderful! This recipe really brings an exotic experience for the taste buds. I added extra cinnamon to the batch I made. This was simple to make but very messy. I found that keeping my hands moist with water helped a little. |

Comments: I used 2 tablets of a 9oz package. I think the 19oz(package) size was a mis-print. My family loved them. Very easy to make and sooooo good! |

Comments: These were so tasty! If you can't find mexican hot chocolate tablets, substitute 8 heaping tbsps of dark or regular hot cocoa and a ¼ tsp of cinnamon. Also, I recommend adding one tsp of ground espresso to the dough, the cookies taste fabulous! |

Comments: I couldn't wait to try these cookies. I have been sitting on a box a mexican hot chocolate for almost a year (I love mexican hot chocolate but it does take a lot longer to make than the swiss miss). The cookies were perfect with incorporating that special mexican hot chocolate taste.Muy Bien! |
