I made these for my sister's high school graduation. They came out perfect. Neither the topping or the frosting was too runny. I unfortunately didn't have any mini-cupcake tins, so I used regular sized. I had 24 total cupcakes. I absolutely would recommend this to anyone.

These would be SO awesome if you used FiberOne Key Lime Pie yogurt (maybe thickened with whipped cream cheese) Thanks for the idea!

Great recipe. The lime portion of this dessert was too sweet (for MY taste) but the hubs and my kids liked it. I used green food coloring in the cake mix and the green color throughout the whole dessert was overkill. I guess I should have kept it simple. An easy treat if your jonesin' for some key lime.

I made the topping exactly as instructed in the recipe and after adding the cold whipping cream to the pudding, the mixture thickened so much that most of it stuck in the whisk. You'll need to leave the whipping cream out for a while before adding it to the pudding. Next time, I'll try and whip the cream first, add the pudding after and use less powdered sugar and see if the topping will hold together that way. The topping was a bit too sweet for my taste but everyone who ate it liked it. I didn't have time to make cupcakes and frost each one so I baked it in a 9"x13" pan, spread the topping and left out the frosting.

I to had runny icing and the frosting was runny to but they were good my kids loved them

Help! Where did I go wrong? The pudding frosting was runny and the whipped topping also slid off the top of the sliding green "frosting." Any helpful hints? They were embarrassing to serve at a potluck I had to take them to!

the frosting topping for this recipe is awesome not super sweet like most this has a creamy and rich taste with just the right splash of sweetness.

These were amazing! I have always been a fan of Key Lime so when our Betty Crocker calendar featured this recipe in June, I was just looking for an excuse to make it. Well our office had a carry-in on July 1st so I decided to go for it. Being a man in my mid 20s, of course I had almost nothing in my kitchen needed for this recipe (all I had was the oil and food coloring). So after spending $14.45 at the store I was set. The prep was simple and the baking times suggested were spot on with 14 min at 375. I admit I was a little intimidated at first, but this was easy! The hardest part was icing them, which I have never been good at anyway. I ended up with 38 cupcakes (only 36 made it to work...yummy) and a lot of Key Lime pudding and whipped icing left over. Next time I will either make the cupcakes smaller or use more cake mix (lemon cake mix sounds great too!). At work, they flew out of the box and I got a lot of recipe requests. Thank you, whoever came up with this recipe, for making me very happy!

Made these yesterday, simply amazing. I did not have mini muffin pans, so used the regular size.

I made these yesterday and I must say mine look even better than the ones in the picture. They are delicious! I used fresh regular lime juice and zest (b/c I couldn't find key limes). I added 6 drops of food coloring instead of four b/c the pudding still seemed yellow after 4. Maybe it was different b/c I used gel food coloring. They are indeed very time consuming, especially when you are squeezing your own lime juice and grating your own zest. Also, as mentioned by others, I did have a ton of the green pudding mixture left over and even a good amount of the frosting. I would definitely make them again though!

These were good. Great key lime flavor w/ out having to bake a pie. This was a little time consuming & I had leftover green pudding. My hubby took some to work & he said they were gone in a flash. I'd make this again but maybe try in a cake form (I'd save the 2 cupcake batches & peeling papers plus you can just spread the toppings all over rather than frosting 48 cupcakes twice).

I made these key lime cupcakes for my dad on father's day and they were so delicious!! My daughter and I almost ate them all before my dad arrived for dinner!

I made full size cupcakes for my 6-year-old's birthday. I used regular lime juice because I had it on-hand and didn't feel like running out. And I used extra lime juice per other reviews, after tasting it with the recipe amount. It needed more tart to counterbalance the sweet. They were wonderful and beautiful. I sprinkled a little decorating sugar on them for sparkle and used corkscrew birthday candles. Will definitely make again, although maybe as a cake next time.

As I was making them I discovered I had didn't have any more food coloring, so the pudding mixture wa yellow and they were just as good. Next time I would add more lime so they will have a kick. Also great with lemon cake mix. Little time consuming, but they look geat and they came out exactly like the picture. I was asked if they came from a bakery. I also did not have enough cupcake liners, so I made half cupcakes and half in a square glass pan. I haven't frosted it yet, but I think I will follow one user's suggestion and cut it in half and put the pudding mixture in the middle and frosting on top.

I read the reviews and thought this would be a pretty and delicious treat, but it turned out terrible! The green part was runny and not the nice green color of the photo. The white part was OK, but only after I added a lot more lime zest. I would not recommend this recipe at all.
