This recipe is impressive enough for your nicest lunch.Variations: I use fresh tuna, and marinade it for 2 hours in the marinade from the Mediterranean Grilled Tuna Sandwich recipe, then broil or grill the tuna steak. One 8-oz steak is usually enough for four people. Or I use the same marinade on a comparably sized chicken breast. Then I double the marinade above, boil four medium red potatoes, slice them, and put them in enough marinade to cover in a ziplock bag in the refrigerator, letting them marinade for at least four hours. I will arrange this salad on a large platter and let everyone serve him or herself; that way, the vegetarians can leave the tuna for the rest of us!
